Dry systems are older type of hydrant systems (Historically referred to risers) these basically have no water in them. Both systems operate on the same principal, FENZ (Fire & Emergency New Zealand) staff pump water from their appliances into the hydrant system, to provide them with firefighting capability internally within a building.
